What are some fun uses for the pulp from my juicer?

I have all this fruit and veggie pulp left over from when I make juices. I know it’s full of fiber and nutrition and I can’t compost it right now, but other than veggie burgers, I can’t think of anything classy to do with the pulp. Any ideas?
